Stevia is extracted from the leaves of Stevia rebaudiana, a plant native to South America but now grown widely across India as well. The sweetness comes from steviol glycosides, compounds around 200 to 300 times sweeter than sugar by weight, meaning tiny amounts go a long way.

Unlike sugar, stevia doesn't raise blood glucose, which is why it's become a common substitute in low-sugar and diabetic-friendly food. It's listed on ingredient labels as INS 960, the international numbering system code, not a chemical additive despite the number.
